do you toast your spices /ck/? i've just recently started doing it when i make chilli and it's pretty great. i stick all the paprika, cumin and ground coriander that's going into my chilli in a dry pan and heat it til it just starts to gently smoke, then get it all out of the pan and set it aside til it's time to use it. i can't recommend it highly enough, it's changed everything.
any other dishes it's good to do it with? any tips? spices it's particularly good with? any it ruins? tell me your toasty secrets /ck/.

i like to put mine on a double boiler at about mid-high for 8-10 minutes before straining it through a cheese cloth into a non-reactive container. then i'll cover it in plastic wrap, pressing down onto the water to create a seal so it doesn't oxidize. you can get away with chilling it in the fridge for 4-6 hours before serving, but i like to go overnight just to make sure.
I like to drink mine straight from a river stream and piss it straight into a bowl of peanuts when it's time to serve.

Nom Wah Tea Parlor - Oldest restaurant in Chinatown given a recent makeover with the concept of all day dim sum. Not really a locals joint, but great for an out of towner to hit.
Big Wong or King's Kitchen - Crispy skin duck and char siu over rice.
Spicy Village - Spicy Big Tray Chicken if you want to try one of the spiciest dishes in town.
A-Wah - Clay pot rice casserole.
Banh Mi Saigon - Buddha sandwich - proof that a vegetarian Viet sandwich can be fucking great.
As for shopping, if it hasn't closed by the time you get here you ought to walk north out of Chinatown up Broadway and hit the last moments of Pearl River Mart. That place is a NYC classic we're about to lose.

It's all Food Networks's fault. They popularized the food truck and B&M eateries with scenes and images of faggot hipsters running them.
