Sounds like a waste of time. I just follow nutritional guidelines and count my calories.

Cancer seems to be killing all the cool people lately anyway so might as well enjoy life while you can.

I've done something similar to this before (limited my diet to 20g of carbs a day) I did it for about 3 months and you lose a lot of weight. It's pretty difficult to do at first but it gets easier once it begins to feel normal. I felt sick for the first few days but once I got over that I felt pretty energetic and great (even hiked a mountain and felt awesome). The only downside to that diet was not being able to eat many different kinds of foods or try a wide range of recipes.

What are some uncommon, rare, or even exotic meats you've eaten? Which one is your favorite? Where do you get it? How do you prepare it?

If you've never had meat outside of beef, pork, or chicken, then this thread isn't for you.

Spent a couple years living/working in Singapore and Hong Kong. Gotta say the two most uncommon meats I've tried were quail and goat (mutton). Quail was essentially a miniature version of roast duck that you see in Chinese restaurants in terms of taste and appearance, though it was a little bit more dry than duck. I've tried goat in various forms such as soups and curries in Singapore, and my guess would be that it's cooked in such a way to minimize the gamy taste. Overall it has a stronger taste than lamb, and that's even when its been stewed in spices for hours. Bear in mind that in SE Asia the term mutton is used interchangeably to refer to goat.

In the West you can go to any Chinatown or Little India you can probably find quail or goat dishes, respectively, though I can't guarantee on its authenticity.

Living in CA, I've had most of the big western game meats - venison, elk, bear, rattlesnake. All those deer and elk variants are fricken delicious. I'll always take as much as I can get from hunting friends who like to share (or have too much).
Bear was definitely my least favorite, would not buy a bear shoulder again. Way too dark and oily, almost a dank flavor.
Rattlesnake was fine, but it's too bony and stringy for my taste. Much prefer the alligator tail meat I've a few times at cajun places - that's almost like a nice pork roast.
You can buy most of them on-line if you don't have another connection.

Here in Queensland you can pretty much get roo meat easy from most supermarkets. It's cheap and healthy so it's a pretty good deal as it's price is similar to 5 dollars for half a kilo, although it is rather gamy and can be quite tough if not cooked properly. It can be ground into mince for your burgers, mince or patties if that's your thing too. Some nice fillets will serve as nice "healthier" substitute for beef as it has next to no fat.

Chipotle announces going GMO free. Go public. Stocks doing great. Monsanto, McDonalds stock plummeting. Big Ag, BioTech industry, Wall Street, all butthurt they are losing money to Organic foods. Organic food industry making billions of dollars now and growing every day. People boycotting GMOs all over the world. Chipotle anti GMO, very vocal about it. Low and behold after years of being in business without any health related issues they have an EColi outbreak of a strain that is only seen in labs. No one dies.
Now the Feds are involved. Feds have never been involved, even when Taco Bell killed a bunch of people with their outbreak. Even when other food suppliers killed people with their outbreaks. Even when every damn fast food chain in America has EColi outbreaks.
Why all the heat on Chipotle? They went against BIgAg, BioTech industry, McDonalds.
Chipotle was sabotaged. We all know this to be true. I have never stopped and will continue to support their mission. I love Chipotle and any other company that tells these assholes to fuckoff!!!

Saying GMO food is somehow bad for you is like saying domesticated animals shouldn't eaten. Modifying plants to produce abundant, nutritious, and tastier food is just logical. There isn't some magical nature spirit that gets butthurt because humanity is scientifically altering her bounty and curses those who don't eat organic.

Hell even modern "organic" varieties stem for heavy genetic manipulation. You could barely eat the earliest versions of a banana until we bred the fuck out of it. GMO is just using a shortcut without having to wait for mutations.

I haven't done a bread thread in a long time.

Anybody bake anything recently? Anybody going to bake something soon? Anybody have questions about how to make bread?

I have a pretty boring dough going right now. 100% bread flour, 72% water, 2.8% salt, 2% non-diastatic malt, 0.05% yeast. Currently in autolyse. Going to add flax seed, pumpkin seed, sunflower seed, teff, and dried cranberries then bulk ferment overnight in the fridge.

I made some honey wheat oat bread a few days ago that I'm working through. Before that I made some buckwheat pecan bread that came out pretty well. Nothing super crusty like your picture, just standard sandwich loafs.

Once I finish off the honey wheat I'll probably make some rye bread I think. Waiting on my new mixer to get here since the cheapo shit one I got as a gift a few years ago finally died so I could justify getting a new Kitchenaid.
