Just touching uncooked meat is very unlikely to hurt anything. Wash the tongs after you're done using them, but no need to wash them while the meat is cooking or whatever. If you're really germaphobic, just quickly wipe them down with a paper towel.

I made some spicy chicken nuggets today. Feedback/comments appreciated. How do y'all make your chicken spicy? I added a ton of cayenne to the grounded up chicken and I added siracha to the egg in the dredging process. The nugs were spicy but not that spicy.
Getting them all battered up. I put a lot of cayenne and some salt and pepper in the grounded chicken. I used bread crumbs, egg and siracha. No flour because I'm lazy and don't feel like it really does anything if you are using bread crumbs.

I normally make a spicy sauce rather than making the nuggets themselves spicy. That way people can choose how spicy they will be by how much (or what kind of) sauce they use. It also helps keep the oil in the fryer clean longer; I've found that if you strongly season the batter or breading on fried food a lot of that flavor goes into the oil.
