I tried making coq au vin for my mom for her birthday but she's a recovering alcoholic so I thought it would be ok to substitute unsweetened grape juice for the wine

to make matters worse, I had at that point no handle at all on searing and so the skin wasn't browned or adhered at all

needless to say, it ended up being a disgusting fruity mess and the chicken had turned purple and because of the bad skin-job, which had turned snot-like and slimy gray, every piece of chicken looked like a necrotic testicle

It's healed by now but fuck that knife was so damn sharp I wish I still had it

Our favorite Chef / Owner of the local Chinese place died and the food there went bad in a short time.

They had very good General Tso chicken when the Owner Yum was alive. But now they have new cooks working it kitchen and the food is not the same.

The sauce tastes different and its not consistent each time you order it tasted different or has a different thickness.

And the chicken bits that go with the sauce used to be made differently.

Before they were slices of chicken that were fried with a coating that left them crunchy, crispy and not smooth. But they stopped making the chicken that way and they instead cut them into cubes and fry them with the smooth batter that they use for Sweet and Sour Chicken.

If you have eaten sweet and sour chicken before you know the type of batter I mean. Its not as good for the General Tso Chicken.

I have tried to replicate the dish at home and I can do an ok approximation of his sauce. But I am having trouble getting the chicken right.

The batter is tricky. I have tried a bunch of methods and none of them give the same result that Yums general tso chicken had.

If you want a smooth battered chicken like Sweet and Sour you get it by mixing egg with cornstarch and then frying the battered chicken.

Or you can use some Drakes seasoned flour and make a batter and put the chicken in that. This is good for making Sweet and Sour at home but its not the best for General Tso.

When I make the General Tso I usually mix up an egg with some Chinese cooking wine and then coat them with cornstarch and fry.

Other methods I have tried is with using the Drakes seasoned flour, but its still not right.

I wonder if he was using some kind of flour to batter the chicken, because it was not really a wet batter it seemed like it was a dry batter because it was not smooth.

Today I am going to try like shown in the image here. its with no Egg, just the wine and cornstarch.

It's just bread, usually with a splash of oil. Make a pile of flour, add spoonfuls of yeast, salt and oil, mix in water until there's no dry flour left. Shove it around until it's smooth and leave it alone for a few hours. I usually make it in the morning, because if you let it sit for most of a day you don't need to bother kneading as much.

If you want grams, it'll be something like 500g flour, 300g water, 10g each of the other things.

my dad invited me over for 4th of july for a filet mignon he's cooking and he said he marinated it for 48 hours. i feel like that doesn't sound right? i've never prepared or cooked filet mignon before so i don't really know. is he doing it right?

Why did Wendy's change their buns. They are now absolute dog shit. The old ones were 50000000% better. I used to love a plain #2 now it just tastes like ass hole because of the bun.

I think the argument is that a regular oven would work in lieu of a wood fired oven, something which is no doubt true. Also sous vide is super memeish, if you don't see that then you're a pleb.

I tried making a martini with Beefeater gin and it just tastes like burning. I see Beefeater a lot though, even in nice bars. Is it a bad gin or am I bad at making a martini?

There is an art to mixing things, but if the chief complaint is "burning" then it's probably because you're a pussy. Make a weaker martini and see if it floats your boat. Also google around a little if you like, there's plenty of websites that breakdown the different gins and describes them.
