Help me out /ck/
I'm trying to make pulled beef.
I have a 4kg round roast. I marinadet it yesterday with some rubs, cognac and needle injected it with 6% salt solution.
So what's next?
I've made pulled pork before and it came out fine but beef is much dryer. Is there something I should bare in mind?

>I'm trying to make pulled beef.
This isn't a thing. BBQ some beef ribs, or smoke some brisket. Round? Oh man. That isn't going to pull at all. You could have braised some chuck roast however, and pulled into chunks for saucing.

Try turning your roast into a fun recipe for ropa vieja or vaca frita, might achieve your idea for saucey shreds of meat without overpowering it with BBQ flavors.

What the fuck? Why is round roast not good for pulled beef?
I'm trying to make tacos.

Got some smoked salmon here for lunch.

What's the best way to cook this? Bake and then sear on high heat?

It's already cooked. Put it on a bagel with some cream cheese.
>>
Wouldn't it taste kinda raw though? I could try that but it just seems a little bizarre to me.
>>

>Wouldn't it taste kinda raw though

no. it's salty though, so don't add any.

Two entree plate with orange chicken, Beijing beef, fried rice. Tell them to poor extra teriyaki sauce on the rice.
>>
I'm here too. Got the Shanghai Beef with fried rice. Also got some teriyaki to put on the rice when I get to it. Good call, anon.
>>
Noodles as side, orange chicken obligatory, and get the honey walnut shrimp. Eggroll as well if not crab ragoon.

Just one piece of advice... if the colonel wants to have his way with you, you let the colonel have his way with you. Don't struggle, don't resist, don't fight.

You want to go home with all of your organs, don't you? And you don't want to carry your nose and ears home in a brown paper bag.

What are some good homemade sauces and recipes that you enjoy, /ck/?

Yesterday I made an amateur worcestershire sauce for a beef stew crock pot meal, it's good but i think it came out a little too vinegary, I want to do it again but I think I'm going to have to constitute it with something a bit thick like BBQ for flavor or corn starch for viscosity.

I have a whole bunch of chicken drumsticks that I want to cook in the crock pot but I haven't come across any good sauces that I could make for them. I'm thinking either a soy sauce base or maybe experiment with a buffalo sauce base.

Share your favorite homemade sauces of any kind.

I mix ketchup and mayonnaise and pretend I'm hot shit

Sometimes I mix in some parmesan dandruff or chili powder to meme it up a bit
>>

>Yesterday I made an amateur worcestershire sauce

How so? that stuff takes months if not years to ferment properly. Or did you just make some bullshit knockoff?
>>
>>7854003
The latter. I just googled a recipe no did it, it was basically just apple cider vinegar with spices, although I used a food processor to substitute some of the powders with fresh ingredients like onion and garlic.

I just wanted a vinegar base for the crock pot and I knew there'd be an imitation recipe out there.

Is Halal food prayed over my some Muslim cleric Or Iman? I know them people make great food, but I believe Muhammad was the anti-Christ and is Satan's prophet so I don't want any prayers to the devil said over my food.

Also is the maker of the Saffron tv dinners Muslim?

If Muslim prayers are said over the food is Christian prayer over it enough to sanctify it?

No, you have to jizz on it to take the blessing away
>>
No idea but I like that brand of frozen dinners. They seem minimally processed
>>
If you're not being facetious, no, halal food isn't prayed over - it's just prepared/slaughtered a certain way and inspected by religious officials prior to it being packed up to make sure it is sound for consumption by muslims - a similar process to the approving of kosher foodstuffs. If you are a follower of Christ you should pray over your food regardless of how it was produced.

Pic related, I like to have sweetened coffee with a side of pickled chili or jalapeno as an afternoon snack.

It's because you've been sold a pack of lies. You want a very fine grind, espresso grind, to make cold brew, but the internet says to use a coarse grind, so you've been doing it wrong the whole time.

look at this bullshit:
https://www.youtube.com/watch?v=x0SUDF6RpS0
an entire POUND of coffee for a quart of coffee. That's a cataclysmic amount of waste. That's like burning down a tree to make a single burger.

It's basic chemistry, you want an extraction in solution, you grind the solids as fine as you can to maximize reaction surface area, but a whole bunch of retards never had a basic science education and propagated a bunch of nonsense about cold brew, and you fell for it since you also did not graduate high school either.
Anyway, try it with an espresso grind and you'll see the real benefit

Guys (and girls, hurr), I'm in quite a pickle... I've planted 5 tomatillo plants. They have grown quite a bit, they are bearing fruit, some are even falling to the ground, but...

I have no idea if they're ripe or not.
The ones that have fallen to the ground taste like unripe plums or something.

How to check if they're ripe? How should they taste? What can I do with them?

pls respond

why?
I mean it'd be a different story if you'd been like "oh man I love salsa verde, I'mma plant some tomatillos
>>
>>7853742
>How to check if they're ripe?

firmness. Think of it like a tomato: if they are very firm to the touch they aren't ripe yet. As they get ripe they will have some "give" to them when you squeeze them.

>>7853769
Also this.
>>
>>7853742

they are ripe when the fruit is easily picked from the plant and the outer skins are papery and dry.

they are firm, sour and tangy. You can eat the whole fruit including seeds except for the stem. they are best when added to fresh salsas, cooked into spicy sauces or chili, or can be pickled, made into chutney and canned, and enjoyed as a spread on a variety of foods.

shredded pork shoulder(pernil) with a tomatillo sauce is absolutely great, for instance

What does /ck/ think of this man?

Great chef, well established, not the dick head that his TV personality tends to be.

He's a executive chef at heart, and has the temperament of one. But he knows what's up.. He became a celebrity chef, when celeb chefs were still chefs that earned that status through their culinary success. Now an ass load celebrity "chefs" just do "quick and easy" recipes for the general public to jerk off over and think they know what they're doing.

Requesting best cities to live in

I want food carts, food trucks, food stalls, classic corner-diners, basement bars and what not
Those that play host to those picturesque homes of "The Best" on every block
Towns, cities, counties - all that offer a good number of those easy fast food street vendors for when you're on a lunch break

Simple or complex, pubs and diners around every corner, or that one place with the food

Does /ck/ make their own jerky? It's my favorite snack, but I don't like paying $3/ounce in stores. I just use my oven, but I'm thinking of investing in a dehydrator or a smoker. What do you think?

I have a dehydrator but have also used the oven.
I think the oven works just as well once you have the temperature and door set just right.
Never tried smoking it, I use my smoker for ribs, turkey and nuts mostly.
