Looking for a new 8" chef's knife for around $150. Last one was a German knife so I'm thinking of trying something Japanese. Anyone got any experience the different Japanese knife makers and steel types?
I have a Global GF-33. It's been in service almost daily for over 5 years and with regular maintenance and sharpening, still retains an edge that's nearly as sharp as when I bought it.

Oyster cocktail
Ingredients
6 oysters, fresh, open and retain their juices
¼ to ½ onion cut into very thin slices
1 Tomato, seeded and diced
½ green sweet pepper, diced
½ tbsp. Chopped cilantro
The Juice of 5 Limes or 3 lemons
½ tablespoon of olive oil
Salt to taste
Soak the slices of onions in a cup of cold water with a teaspoon of salt and rinse well. drizzle the onions with the juice of
1 Lemon or 2 limes.
shuck the oysters, keeping the juice from the oysters. rough cut the oysters.
In a medium bowl, combine chopped oysters, their juices, onion, chopped tomato, peppers, the juice of the remaining
lemons or limes, chopped cilantro, olive oil and salt to taste.
Let marinate for about 5-10 minutes max in the fridge and serve immediately.
optional you can add a shot of tequila and a shot of clamato.
enjoy.

I want to get into eating raw/less cooked meats. Which meats are safer to eat raw? Which ones should I avoid? I.e. I'm pretty sure you should never fucking eat raw chicken, I don't know if the same applies to all meats, maybe it's less risky.

I've had chicken sashimi at restaurants... its safe it you have the right chicken.
Same with pork... nobody has gotten hookworm from pork in centuries.
The only meats that are reasonably safe to eat raw are ones that have been prepared specifically for raw consumption. Raw ground beef and pork are usually produced from whole cuts that are seared on all sides before being freshly ground on a dedicated sterile meat grinder. A reliable butcher would also have these products regularly checked for safety.

how does /ck/ feel about canned fish (nOT including garbage like tuna)? i like herring and sardines, and the occasional canned salmon, but i currently only eat the more expensive stuff like king oscar's. are there any cheaper brands that aren't complete garbage? i had some $1 can sardines once that had really big bones and tough filets and to be frank they turned me off of cheaper fish. i haven't tried alternate packings other than fresh water (usually get olive oil), wondering how sauces like mustard/tomato/hot sauce turn out.

Mackerel is good. God-like salmon is also god-like, but I don't really have access to those really really good canned salmon in my local supermarket, so unless I want to order online or something I am out of luck.
I am not picky about my food, so I can endure the cheaper kind of fish, so I am afraid I am not a good guideline when it comes down to tolerable cheap food.

Just lost a great prep/cook last night. Car accident.
Mark was an amazing cook. He wasn't the smartest guy in the room but he had the most passion of anyone i've ever known. Always had a great attitude and would give you the shirt off his back.
He could tell stories for days. I once spent an entire 9 hour prep shift with him, just me and him prepping mano y mano and this guy kept me entertained the entire time. I heard about the time he met a girl in a park and she gave him head 10 minutes after he met her. I dont know if it was true but it's true to me.
He shared a DUI class with my gf and in one class the teacher asked if everyone was doing what they wanted to do for the rest of their life, and if they were raise their hand. Mark, the prep cook, and a doctor that was in the class raised their hands. Love you Mark, you are a bad ass... will miss you forever.
