/ck/ I cook like your typical bachelor. Basic shit, like just pan frying everything (chicken, steak, vegetables, etc) in salt, pepper, and olive oil. Maybe adding in some chilies or whatever. I never bake anything. I also frequently use online recipes. I enjoy basic food like that, even when I go out to restaurants.

Is there anything wrong really with cooking this way? it seems like you guys cook really intricate things.

its not the pan part, just the how everything is so basic.

People cook for all sorts of reasons. Some enjoy the challenge of trying new dishes/techniques, and some just want to put a meal on the table and save some money vs dining out. If you like plain food cook plain simple food. Nothing wrong with that.

If you want to challenge yourself there's lots of things you could do but by all means live your life the way you like!

If you appreciate it for what it is rather than try to measure it by how closely it resembles real Chinese food, cheap take out/buffet style American "chinese" food can be really good. I would go as far as to put it in its own category just like Tex-Mex is considered its own category rather than being considered a knock-off of Mexican food. What do you think, /ck/?

Most American Chinese food is actually really shitty, trashy cornstarch thickened sweet oily fried garbage that pretty much all tastes the same and is usually of dubious quality. Authenticity has nothing to do with it being bad. In this day and age there is so much better Asian food available literally everywhere that there's no longer any reason to keep eating that crap; it's honestly kraft dinner and tendies tier nostalgia, and if you haven't grown out of those type of foods you don't belong here.

OP, I'm with you. It's good to expand your palate. Even American-style chinese food has more green veg than a McD's value meal combo.

Don't worry about whether it's "authentic". Food is food. Whatever you toss in your mouth is food. Whether it's authentic is a cultural consideration. So don't dismiss food because it's "inauthentic", and don't assume that food is good because it's "authentic".

North American "Chinese food" is loaded with sodium, often has a lot of msg, is often deep fried, and even the fresh veggies are drowning in "oyster sauce" which is full of sugar. But it's still arguably better than McDonalds.

Should it be its own category? Maybe. Whatever. Who cares. Just investigate what you're putting into your mouth if you haven't cooked it yourself.

with your experience they won't let you do a lot of experiments anywhere. Offer to cook the staff meals or something if you wanna dick around with ideas. Cook more for yourself, at home, if you want to experiment.

Employ yourself where you think you will be able to learn the most. Find a restaurant where the exec chef is really fucking good, and lives in the kitchen and learn from them.

I meant experiments by a constantly changing menu/ingredients/seasons. I cook 30- 40 hours a week at home between baking and projects and dinner. Your last sentence decided it for me. My current chef is arguably lazier than me.

So, what do with a bunch of hatch chiles? I know you're basically supposed to roast them first whatever you do, but what are your favorite applications? I'll probably do some stuffed things tomorrow with whatever I have on hand, and make a basic green sauce, but looking for other ideas. If they turn out to be as good as everyone says I might buy more and freeze them, as that supposedly works well.

Hello /ck/,

I am visiting some friends that lives in the US. I wanted to cook them a meal from Italy which included horse meat so i went to the supermarket to buy all the ingredients but i couldn't find any horse meat anywhere. Even a specialized butcher told me that i "Wouldn't find any horse meat around here".

Why is there no horse meat in the US? Are Americans afraid of good high quality meat?

It's probably more of a cultural thing. I grew up looking after horses and saw them as pets, but I'd still try the meat. Heard it has a shit ton of iron in it.
