Your list looks good to me, but you could add whatever you want: tomato, guacamole, corn, beans (black, pinto, refried....), jalapenos, cheese, crema, etc.
And marinading the meat would certainly make it tastier than skipping that step.

So, I'm going to make Lamb neck stew tomorrow, which is my favorite dish.
Do you guys have any ideas or theories I can ponder upon between tonight/tomorrow afternoon.
Pic related.. It will have 2 cans of diced tomatoes, some paste, bundle of parsley, and a white onion ran through a food processor. I have all the spices, and usually go with a more middle eastern type of mixture.

middle eastern? add a bit of cumin.
use LOADS of onion. don't use any food processors on the onion - dice it in big chunks, put it in lambgrease on the most heat you can, stir until the onion's golden, then add meat. stir until meat's brown from all sides. drop the tomato paste, add more tomatoes if needed, and some finely diced carrots (see if you can get those golden ones, the ones that are almost yellow). only after all of this stuff is in the pot, add water and reduce heat. don't worry about the meat - the great thing about sheep is the meat doesn't get overcooked as easy as beef does, it won't get dry.
