How exactly do i setup a VM with linux that I can SSH into and host a server on that's accessible from the host?

What is a good distro for a shitty laptop?
I tried Ubuntu but it somehow ran slower than Windows 7.
I'm on an AMD Athlon 64 x2 (1.9 GHz) and 4 GB of RAM.
What is a good, lightweight distro?
I've considered installing Arch, but after the configuration, making your PC actually usable is a hassle.
Gentoo would kill my CPU with compiling as well, so no /g/ meme.
