It's also very much recipe specific. If I made a kebab I'd probably leave the shell on to help both protect the shrimp from direct contact with fire and to seal in the juices that could otherwise leave the shrimp tasting rather dry and charcoaly.
If I were however making some tacos gobernador I would certainly peel the shrimp completely.
In either case though removing the digestive vein is necessary.
