How do I make a pie where the pastry is soft? I've eaten pies before where only the top is flaky, and the pastry on the bottom is soft, almost with the consistency of a dumpling.

I love pies like this. Is it a simple matter of undercooking it or do I use more suet or something?

So I finally want to invest in the highest quality cookware that will last a long time if taken care of. What does /ck/ use? What's top of the line for someone who cooks more than one meal a day every day. ( I put alot of wear into 100 tier cookware).

I use sitram for most of my stuff except the cast iron which is various lodge and staub.

The sitram is ok but in retrospect I should have gotten all clad. My dad has all clad and it's pretty fantastic. I only got the sitram because I wanted to be a special snowflake.

A friendly tip:

Much like hot sauce, freshly-grated, genuine Parmigiano-Reggiano can elevate even cheap pizza such as Little Caesars to great heights.

I also bought a jar of pepperoncini and squirted them over the pizza, much like I used to do with Papa John's during college. Worked very well, and then I wondered why I never thought of just getting a jar of them before.

So my mom was visiting me for a while, and I left for a few days for work. I got back, and the STUPID COW used my cast iron, and fucked it up. She tried cooking eggs and potatoes in it, let it sit around, and then decided she would soak it to get everything unstuck, without oiling it afterward.

So now, my pan is flecked with bits of old burned egg, and has patches of rust coming through. I know it's fixable, but I've never re-seasoned anything that's in this kind of shape.

I guess I should just use sandpaper to get everything off? And then if I rinse all the crap off, wouldn't it just instantly create rust on the bare metal? Heeeeeeeeelp

If you have cream, use some egg yolks and broth as well.
Tastes better than milk imo, and much richer flavor.

My parents picked one up ages ago and never used it so I inherited it. Things pretty great, I mostly use it for rice as I don't have a rice cooker.

Hi /ck/,
I've got two eggplants to get rid of. What can I do with them that involves minimal effort and other ingredients ? Slicing them and cooking them in a pan with olive oil is the only way I know and I'm looking for other ideas.

I just ordered a large double qp meal with big mac sauce and lettuce added, chocolate thickshake and triple cheeseburger on the side.

The qt girl that regularly delivers to me is always flirty and sometimes we'll chat for 5 minutes at a time.

Only problem is she looks like she might be 16 and I'm 24 so I'm avoiding that landmine.

Mainly white and demerara. White is often required for recipes, and I find demerara is a fine substitute for brown sugar but brown sugar is not always a fine substitute for demerara.

If I need a dark, sticky brown sugar, though, I'll either get dark brown sugar, or substitute with molasses or treacle. It depends what I have on hand.

I've used stevia and agave before, but its really expensive for sweeteners. Each has their own use and purpose.
