I clean the bones under running ice cold water until nothing red or dark remains. I clean my pot.

I wish I had more money, would have bought a whole bird and some more pork meat. Broth still turned out decent.
After cleaning our bones I put the pot on the stove, add in some vegetable oil and brown my bones.
Usually I do it in the oven, but I wanted to try this method since I like my tonkotsu broth very fatty.
While waiting for our bones to brown we can cut up some of our veg.
I opted for leeks and sweet onion since I got a really good deal on it, it was already a few days old. I hate letting things go to waste so I had to buy it.

Cream cheese is disgusting. It ruins everything it touches. Bagels, sandwiches, sushi... Who the fuck ever thought these things would be improved with the addition of cream cheese. Just looking at this photo makes me sick.

Well maybe that's because they just put 20 times more cream cheese than it needs.
Cream cheese has its uses. In small amounts on a bagel? Fine. In cheesecake? Fine. In sushi? God no.
I can't for the life of me figure out how anyone can enjoy cream cheese in sushi. The flavour combination just doesn't work, I can barely stomach it. Worst part is wherever I go (never been to Japan) the sushi has fucking cream cheese in it, as if it's some sort of culinary masterpiece.

Back in my university days the local supermarket had a cooking sauce that was amazing.
But I can't find it anymore, it was an South East Asian Chilli and Coconut sauce (I think it was Indonesian or Malay) for curries. Does anyone have a clue what it could be, and what the authentic name is for it. It's been years and I can't find it.

My workhorse chef's knife is getting too dull even after honing. The problem is most reasonable quality sharpening tools/setups cost more than the knife itself. What do? I don't want to throw away the knife and buy a new one, but it doesn't really make sense to sink so much money into a sharpener.

Amazon reviews are all over the place on it, so was wondering if any body had tried it. Inb4 make your own you lazy fag. Also good all purpose sauce general.
it's good enough, your own would be better because freshness counts but I'm sure you'll be happy. I usually just use chimi as a sauce for bare cooked steak but you can definitely use it as a marinade, I just prefer to control how much flavor I get from it

Nope, do your own dude, those canned chimichurri are pig disgusting and nothing like the real one (argie here). But to make the real chimi the most important you need is "aji molido/triturado" it's an argentinian dry and crushed red chili. Check you local "latin" store. The rest of ingridients are everywhere.
I find chimichurri to be quite mediocre
