Into a food processor, put some parmigiano cheese and powder it. Then add Italian raw ham and process to mince. Then add pork mince, parsley and whole egg. No salt. The saltiness should come exclusively from the cheese.
Use that. It is my favourite filling and one of the most popular in Italy.

Of course it's amateur, my Mrs is out and I cooked myself a meal. The mushroom sauce is fucking delicious. I've never eaten people so I don't know if it's like kangaroo sorry. I'd rate it a 9/10 overall for taste. The photo also looks a lot worse than it looked IRL.
