The niche product can definitely be the factor that makes it profitable and by specializing in a specific product
you could get lower costs for inventory/production. If it's some new/very unique food then go for it.

The biggest problem with a premature mass adoption is scaling, in my opinion. We would get the same problem with transaction fees as Bitcoin has today. The switch to POS should improve scaling, but I think there will be a year before that happens.
The implementation of sharding will massively improve the situation, but my guess is that that will take yet another year.
