How profitable are they? Would you get rich if you're selling a niche food product that people want?
What about buying a fast food franchise?

depends on a lot of factors such as location and such,
especially in cities it's usually super fuckin competitive so not very profitable then.
The niche product can definitely be the factor that makes it profitable and by specializing in a specific product
you could get lower costs for inventory/production. If it's some new/very unique food then go for it.

A friend of mine lost a lot of money with his restaurant. He didn't avoid common pitfalls:
- Fixed Costs.
His fixed costs were too-damn-high.jpg.
Whether rent or loans or material costs.
- Employees.
He paid average loans but simply had too
many employees hired.
- Meals.
He had too much on the menu - ~50 meals
and drinks (softdrinks, juices, milk, beer,
liquor). Therefore he had to buy much more
ingredients than necessary.
In addition the meals were not balanced - i.e.
nearly everything had other fixings. Also the
ingredients were too expensive (goose instead
of chicken, green cabbage instead of
potatoes).
- Location.
The location was not that bad but most of his
potential customers were not interested in his
menu. They were mostly students so cheap
snacks like fries, burgers, cheese balls,
pizza would have been a good choice.
