Are there any RPG systems that have a more fluid, adaptable magic system without being too rules-lite?
For example, instead of discrete spells with specific effects that can never be changed, like in D&D, I'm looking for something where you can do whatever you'd expect to be able to do with, say, magical flames, but still with enough rules governing its use that it's not completely broken.

And I want this to be in my setting....
But I need a reason,
an explanation to why creating a soul from nothing and placing it in a body is just as vulgar as taking an already existing soul and stunting it through necromancy.

The concept for creating golems and the necromancy to create zombies is one in the same.
Proper necromancers know how to use portions of their own soul to animate a body but they cross the line when they force a soul (even an animal's soul) into a body because it degrades the soul to the point that it becomes an evil spirit and pollutes the nature of the world around it.
Those who create golems are no different and cut from the same cloth but try to justify it as not using bodies of people but artificial bodies

I should add, using your own soul to animate a body or golem is proper because it limits your ability to create and control many of them so a wizard who creates a golem as his personal servent is fine but that's pretty much what he's stuck with. If you have no scruples and decide to implant a soul then you can create many although an animal's soul will cause it to act like an animal so a human's soul will allow it to be intelligent and take complex commands and do things intelligently

I discovered to my dismay that drawing animu eyes on post it notes and then sticking them onto potted plants somehow breached the Data Protection Act.

Step one: Write a good character
Step two: Decide their character afterwards.
Gender-specific dramatic story differences have no place at most tables unless your group is capable and mature enough to handle them. If that is the case, you are likely intelligent and level-headed enough to figure it out on your own.
If that's not the case, you make shitty threads on /tg/ because you have no idea why nobody gives a shit about your special snowflake characters that only seem interesting because of how they appear rather than the personality traits they possess.

Why are kitsune players always cancer?
Five years ago I started GMing with a firm belief that I would never stifle player creativity and allow pretty much any character concept that wasn't blatant fetishism or minmaxing. Boy have five years ground this notion down into fine powder.
Now, I have run the gamut of usual red flags most other DMs would have tossed right out without much issue. I've had samurai and ninja that turned out to be great characters played by sane people who just wanted to try something different. I've had edgy inquisitors that managed to not cause any party infighting. Evil PCs that didn't dirk the entire party in their sleep. I even had a catfolk that avoided any sort of magical realm nonsense. The only thing that has consistently proven to be a universal red flag, is kitsune PCs.
Now, I've allowed kitsune into the party, on some minute hope that maybe I'll get something interesting. But no. Literally every kitsune character concept I have ever gotten is the same. A naive teenage female caster. It always boils down to that. Not even half caster, some full tier-1 caster. Its not like its even just the same person pitching the character. It's always a new player we've invited to the table, and every time I've okayed a kitsune character, it has been met with disaster. Whether the player is a cancerous snowflake that shifts the tone of every session with the grace of a record scratch, or the player is just a flake that misses sessions for weeks on end without so much as a text, kitsune players are always game-ruining fuckheads. Always.
No other race or class has given me problems like this. Just once I'd love for someone to ask if they could play a kitsune martial. But no, because then they couldn't be cutsey little clueless anime shits at every goddamn turn.
