Hi /ck/,
How can I persuade my Dad to allow me to go to culinary school rather than finish high school? Is there much demand in the patisserie industry?

I can't concentrate in my classes because I simply don't care about being there.

I am willing to wake up and go to sleep at ungodly hours just to be able to cook; It is one of the few things I truly love.

All advice appreciated, but fellow ausfags' advice would be best. Thank you.

I don't know of a single decent culinary school that doesn't require a High School diploma as a bare minimum for entry.

I'm a Chinese national and American Chinese food are all greasy, sweet and salty af.

Btw most Japanese restaurants in the states are run by Chinese or Taiwanese people. So I guess that is closer to Chinese food than those "American Chinese Foods"

I was leafing through this Marcella Hazan book and it came to my attention that anchovies are a pretty big deal in Italian cooking. I'd always thought of them as some gross little salty fish fuckers that weirdos put on pizza slices for no reason. Are they actually good? How do I know which ones to get? Is anchovie paste good? Do you get them fresh or canned or what?

Anchovies are fucking fantastic. The fresh ones are best, but they are hard to find because they go bad so fast. So unless you happen to live next to the coast in an area where they are fished then you won't be getting any fresh ones.

Canned are nice. Anchovy paste is super useful; it's great in all kinds of stews and braises. Add some to your pasta sauce and pizza sauce and people will go fucking wild.
