Outside of written history you won't find much. There are audiobooks of On War (Carl von Clausewitz). Carl was a Prussian and his writings are both an interesting look into the period as well as a an excellent text for anyone wanting to understand military theory - even today it's on the reading list for any academy.
Also anything you can find on Alte Fritz would be helpful. He's sorta the poster boy for enlightened absolutism.
