because they figured enough people didn't want an ethernet port, VGA port, etc... in their laptop 100% of the time that they could just make a dongle for it.
if you don't like apple's dongles, you can buy any old generic. USB adapters are cheap, and type C adapters will actually show up on the market soon now that a major laptop manufacturer has gone deep on it.
Simple reason really: Different people have very different needs, so if you want to cater to all of them in one device with built-in ports, you're going to end up creating a complete mess. This means it makes much more sense to only include the basics and then let people pick out dongles for whatever they need and they're generally not going to need more than one or two.
Specially the tablets would be a mess if they had HDMI, VGA, USB, SD card readers and posts/sockets for all the other things people want to use with them.

I've been waiting a year to replace my old laptop, and have weighted all possible 15 inches out there.
It's either the xps or the mac: with the former you're kinda stuck with windows because dual booting is a nightmare, with the latter you have choose between old specs or usb-c only.
I have come to the conclusion that the market does not want us to have the perfect laptop just yet...
