If your proprietary software competes with the open source version it's trivial to compare binaries and find matches for identical compiler symbols.
Changing variable names doesn't change anything because they still compile down to the same machine code.
The only way to avoid this would be to heavily rewrite the open source code to the point where it no longer resembles the original, but at this point, you might as well write it from scratch.
