Why aren't you using Windows 10 LTSB?
-Can fully disable telementry
-No feature updates that add annoying things, just stable
-Gets security updates for a decade
-No extra bloat (Xbox app, Cortana, Edge, Store, suite of apps, etc.)
What is there not to like? Just install it.
