I want to drink, but there are two things holding me back:
1. I feel super depressed and anxious the day after drinking, regardless of how much I drank or how much I hydrate.
2. I want to stay in shape.
Is it possible to drink the way others do and just have a beer with some wings, then not wake up feeling super down the next day? Or is it just my chemistry, and that's how it'll always be for me?

Any other answer and you're throwing your money away. The only usefulness of Whey protein is being a protein of rapid absorption, and you should look for protein elsewhere throughout your day. Eggs, chicken and meat are much more solid choices when it comes to eating protein in your meals.

I've recently been talking to my dad about finding a cheap power rack to squat in for my gym at home. Today he pulled up with something like pic related in the back of his truck and told me he traded a bunch of shit from his garage to get it. He wants to help me set it up tomorrow and I'd feel like a dick if I declined.

I recently dropped all cardio and have been focusing on gaining mass. My goal is 160 at the moment but once I reach that I'd like to possibly encroach on 180 Ibs as ultimate goal
My current working weights for my strength program are as follow:
Squat 5x5: 140
Bench 5x5: 120
Shrugs 3x8: 135 (might need to drop weight)
Bent over row 5x5: 90
Pull ups: I can do 3 sets of 6 reps fairly easily
Over-head press 5x5: 70
Dead lift is around my bench working weight right now but because of my job (EMT) I've been reluctant to start deadlifting because I recently strained my back deadlifting a patient off the floor. The guy weighs about 180 but I had a partner helping me out.
My goals are to get bigger and get all my heavy lifts above my body weight of 150 by the end of summer. Is all this realistic?
