There's no "best chili recipe," there's only personal favs.

My fav includes onions, bell peppers, jalapeƱos, garlic, cumin/coriander/ancho chipotle, tomatoes, black/kidney/pinto beans, broth, bay leaves, and fake ground beef (it literally tastes the same as actual beef when you cook it for a few hours.)

I use McCormick seasoning and I'm not afraid to admit it. I won 1st place in an Oklahoma chili cook-off using 3 packs of McCormick and a can of Great Value pintos.

Stew, I recommend Irish stew.

Im looking for some help in pinning whats in this Tomato sauce. Its like no other, and im from chicago were there is alot of choices. i have tried to recreate this many time with different spice combinations and tomato brands and have failed alot. Ive worked in italian kitchens and im currently working in one and no sauce is like this. You taste it and its a bery subtle sweetness following a nice hit of a combination of spices. I know theres bay leaf, very little onion, garlic, possibly basil, blackpepper and maybe oregano or romano cheese. I cant pin point what is in it, i have tried using saffron,nutmeg, and other similar spices but nothing comes close and you cant describe the taste. All i can say is the sauce has a orange tint and it also slightly bubbles even when its cold. it also looks like theres a reddish pulp in it, not from tomatos but maybe a spice? if you try to pick it up with a fork it stays fluid with the tomato sauce. any help is appeciated. Ive also tried wines but have maybe labled it out because the sauce is always consistantly the same
also the woman who inveted the dish lived in Cesuna, Italy.

I'd rather take the one on the left than the one on the right. Salmon roe looks like pomegranate seeds. Sturgeon roe reminds me of spider eggs.

I bought a jar of pickled eggs, to see what they are like.

I found a rare fruit grower in Maui that grows them. Tbh he said they weren't that great and is a novelty.

F'ei bananas seem worthwhile but disease gets them and they take much Ionger to harvest.

Anyone else got the smoker cranked up for mom? I've got half a slab of ribs I dry rubbed last night and a chicken I brined smoking. They've been going a couple hours.

Also smoking general, I guess.

Pretty simple really, you just have to have a container that can hold coals and maintain a temp of 200F - 250F. Then you put wood chunks on the coals to produce smoke. Meat preparation can range anywhere from salt and 0 or a few spices to fanatically 15 ingredient rubs. My ribs I just did salt, brown sugar, paprika and ancho chilli powder. The chicken I brined, with salt, brown sugar and garlic. Takes 5-6 hours. Just makes for a nice Sunday afternoon.
