Can anyone help me indentify spices used in this sauce?

Im looking for some help in pinning whats in this Tomato sauce. Its like no other, and im from chicago were there is alot of choices. i have tried to recreate this many time with different spice combinations and tomato brands and have failed alot. Ive worked in italian kitchens and im currently working in one and no sauce is like this. You taste it and its a bery subtle sweetness following a nice hit of a combination of spices. I know theres bay leaf, very little onion, garlic, possibly basil, blackpepper and maybe oregano or romano cheese. I cant pin point what is in it, i have tried using saffron,nutmeg, and other similar spices but nothing comes close and you cant describe the taste. All i can say is the sauce has a orange tint and it also slightly bubbles even when its cold. it also looks like theres a reddish pulp in it, not from tomatos but maybe a spice? if you try to pick it up with a fork it stays fluid with the tomato sauce. any help is appeciated. Ive also tried wines but have maybe labled it out because the sauce is always consistantly the same
also the woman who inveted the dish lived in Cesuna, Italy.

Probably salt, pepper, fennel. I don't see any red strands so I doubt there's saffron. Was it spicy at all?

I don't know how the fuck we're supposed to identify spices from a photo, but my guess would be dried oregano. I don't know why there would be bay leaf in a tomato sauce
