i just pan fried them with a nice creamy french blue cheese topping and made gravy with the pan dripping and it turned out decent for what it was

Tenderize them or take long to prepare them - I once used a really shitty cut of pork shoulder for a pulled pork dish by letting it marinade for 12 hours and leaving it in the oven at really low heat for 3. This generally helps shitty cuts of meat, but not really good cuts of meat.
