It's not like they go bad for a decade....just leave them alone in the pantry in a jar or something, until you're in the mood for them again. A cup of lentils are worth maybe 25cents.
There's a steamed rice dish from Ismail Merchant called Sherbanu's rice (his sister's name). It's a lightly spiced rice, not quite a pilaf, with some mealiness texture that is creamy from just a small amount of broken down lentils. Bay leaf, cinnamon stick, a chopped onion sauteed in a little oil, 1-2 cups of rice, 1/2 cup of lentils, and it's cooked together in the water at the same time. It used to be something I made all the time when I made his yogurt chicken. I topped the whole dinner with lots of cilantro and a squeeze of lemon.

Swiss Chalet isn't fast food but it is an excellent spot for lunch. Diner-type food, but a bit better quality, and very affordable.
