try swai fish fillets. swai does not have a strong fishy taste so you can start with that, imo

Sushi - go to a sushi place and sit right infront of the guy making the sushi. Act interested and be cool and he will give you samples of what he is making for everyone else. You do have to order something while there though.

OP, try a good whitefish (I like Chilean Seabass). Shark is what got me into seafood, it doesnt have the weird texture i always associated with fish. i had it fresh caught and YMMV.
Try swordfish, it doesn't have a typical "fishy" texture.

If you live inland your options for good fish are basically to go to a seafood restaurant, go to a premium market (think more expensive than Whole Foods) or go catch your own. If you live on a coast then go with whatever is local.
