Really you only need a sleeping bag that's bug proof, I guess a bivy, that's rated for the temperature, and around that is soft enogh to sleep on.

What do you generally do with a 'camping knife'?

If batoning wood or summat, something thick and stout would be a good choice. If slicing food and carving / light cutting....something thin.

Its a lotta good knives inside $150 US.

Get a swiss army knife/mora/opinel n.9 + hatchet + folding saw and you are set for 99% scenarios. If you need anything else you wouldn't be asking or you are heading right into memeland.

I own a Klean Kanteen with wide opening and 1.9l capacity (they have smaller ones of the same type). Wouldn't recommend it as a) the bottle doesn't tighten properly (it leaks), b) it was fucking expensive and c) after 10h your water will have a metal taste. In fact, this was the biggest dissapointment I had regarding to my outdoor gear, as I thought I had bought a product that will last me a lifetime and it comes out to be less funktional than ordinary plastic bottles.
tldr: Klean Kanteen metal bottles with wide opening are worse than simple PET bottles.

I use an HDPE Nalgene or Gatorade bottles made of PET if I want to save the weight.

I have a goal zero without the battery pack. I strap it on the outside of my pack and use it to charge my phone and other electronics. Works awesome. I've dropped it a few times and it's a little scuffed up but works fine. 10/10 would recommend.

Well at the very least I would prepare by telling someone where you are going so you have a lifeline when you change your mind about slowly dying of dehydration, hunger, and exposure. Besides that what you should bring depends on how long you are going to be out there. How long?

I've always wanted a sheepskin jerkin to wear over my mid layer. I'm a fan of waistcoats in general.

Also a big fan of gaiters but thats' not that unusual. A lot of the time waterproof trousers are OTT, most of the muck I get is on my lower legs, they're the part exposed when I have my poncho on, my legs breath better, and they also stop bugs and loose pebbles from getting into my boots.

A jerkin looks close to a double breasted waistcoat, but the problem is you have to go into the store to try it because double breasted anything (especialy waistcoats and vests) is notorious for having a slim fit. I personally really like my leather waistcoat but i have a feeling the wool one would get warm during summer
