Is there even such a thing as a rap/hip hop artist who makes songs that are instrumentally interesting, aren't mumbly or have an annoying voice, and talk about something other than the usual shit rappers are known for talking about, i.e. "the game" or "bitches and hoes and my dick is 10 inches long" or crime, or drugs, or the usual shit that knee-grows are known for rapping about?
I really want to give these generas are a fair chance, but most everything I've heard so far hasn't been that great (No, Kanye is not good), and I'm starting to uniroincally become that "only thing I don't like is rap and country" type of guy.
Examples of what I would consider good instrumentation would be 2pac's "California Love" or DMX's "Where the Hood at" or Glue70 in general

Why isn't there a lot of music made in surround sound? There are plenty of movies, but I've never heard any music in surround and I think it would be cool to listen to some.

Stereo came about because of the headphones and if you want surround, try classic albums remastered in surround. Black Sabbath's Paranoid is a good start.
