A good area to look at is early English Christianity, and not merely because it is an interest area of mine, but because it is a nice way to view how it spread in a concise area, with a few consistent voices.
Look to Bede, he's a good starter with his books: The Ecclesiastical History of the English people and The Age of Bede (more of a compilation of smaller texts but still), he's a dodgy source overall, but a good introduction into the affairs of the early clergy in the British Isles, the rabbit hole goes from there.
Theology wide, Aquinas is a good start, Augustine of Hippo also.

A.H.M Jones' Later Roman Empire is pretty old and doesn't have access to modern archaeological records but is still an excellent overview of him. I can also recommend some other great ones.
