I only had sushi rice and I cooked it in too much water, the chicken curry itself tastes great

Sauce looks good. Looks edible but those vegetables don't look too appealing.
I don't know about broccoli and red bell peppers in curry.
I'd use carrots, onions, cauliflower, peas and/or eggplant.
