So what exactly is so special about Bitcoin, Ethereum or whatever altcoin out there that makes it a viable alternative to fiat money again?

Transaction times are nowhere near fit for use in everyday situations. Plus with crypto coins you as the sender have to pay the fees, not the recipient (as with CCs).
It's an asset. Think of it as shitty digital gold with massive volatility. And don't let the popularity on /biz/ fool you - the whole crypto universe (BTC and all alt-coins) is still worth less than 25 billion USD. That's the annual budget of one or two large cities. Crypto coins are the tiniest of niches in terms of the financial markets as a whole.

The special thing about blockchain is that unlike your Paypal/Mastercard examples, which rely on credit while the middleman waits for real money to transfer, in exchange for a 3% fee (which is already priced into everything you buy, even if you don't know it), when a blockchain transaction is completed, all coins/tokens have actually changed hands, and fees are typically much lower.

The next thing is a CDS aka credit default swap. It is an instrument that works like insurance on securities with credit risk. You pay z amount of money every now and then and get insured incase the underlying security defaults.
