In the end it comes down to how you train any your mental attitude that increases your odds of survival more then what exactly you train in.
That being said style like FMA have the most familiarity with knifes and knife defense on a practical level.

I think it's kinda bullshit how many organizations create this artificial scarcity of blackbelts by basing it on how much time you spend practicing. If I can take one class a week and catch on I shouldn't have to log hours upon hours for the sake of getting a new belt
I think it's pretty mcdojo to force people to have a certain amount of time, its just price gouging
