It's fairly simple!

First, you find a recipie to make a nice butter crust. You pre-bake that crust dough after laying it out in the pan you're using for your quiche. Sides of at least one inch of dough are recommended. You pierce the dough with fork tines to give it some room for air to escape, and weigh it down with some aluminum foil made heavy with dry beans. This is the most common form of a homemade "pie weight". It keeps the crust level and keeps large bubbles from forming. Make sure the dough has a little oil under the pie weight.

Then, sautee what you want to put in the quiche until it is properly cooked through. Mix with eggs until you can fill the tart shell cooked until it is a light golden-brown, and a splash of milk. Mix it well!

Pour the filling into the tart, cover with foil, and check after ten minutes at about ~350*F. You want for it to be fully set and for a knife to be mostly clean after you stick it in the center. Be sure to stick the knife in a place you plan to cut later.

That's about it! Remember that roasted garlic is the best thing, and so are fresh herbs. Taste the sauteed stuff while you season so you don't overdo it. Don't be afraid to use leftovers when this becomes a thing you're comfortable with doing for weekday dinners.
