Why do people always say to let your meat rest after cooking it so it absorbs the juices and doesn't dry out the second you cut or bite into it, when I can go to In-N-Out, order a double double with cheese, see them cook my patties, put it in the buns, and then serve it to me hot and ready and it is still juicy and not dry at all?
