So I'm thinking of making tacos next weekend. You guys know the best type of tortilla bread to use? Should I be trying to make the tortillas instead? And also any recommendations for sour creams? Those are the only two things I need. I can make the pico de gallo and the rest on my own.

Its pretty easy to make tortillas, but bags of Masa only come in sizes which you'll never get through unless you're Mexican.

Steak and twice baked potatoes, maybe with a salad with goat cheese and dried cherries and arugula. Seems fancy and is well within a beginners skill level to make. Just make sure you use a thermometer for the steak so you don't fuck it up. A big porterhouse is a good choice because you and your SO can split it. Whoever is the top can get the NY strip and the bottom can have the filet mignon. I always do this with my gf and it turns out well.

Do you ever use songs to memorize recipes instead of index cards or some other shit like that?

Here's on of my favorite recipes, in song form:

All you have to do is take a cup of flour!
Add it to the mix!
Now just take a little something sweet, not sour!
A bit of salt, just a pinch!

Baking these treats is such a cinch!
Add a teaspoon of vanilla!
Add a little more, and you count to four,
And you never get your fill of...

Just take a chicken tendie, raw is best
Pound it out flat, yo who would've guessed
Dredge it in flour, then eggs then crumbs
Season with salt and pepper if you're not dumb

Fry in the fryer just for a few minutes
Take it out when it floats up and drain it

I'm looking for a new skillet and have a few questions:
1. I already have cast iron, so now I'm looking for either stainless steel or carbon steel. Which one would you recommend?
2. This is a relatively cheap carbon steel skillet:

Is anyone familiar with this, and are there any reasons to spend more for a different pan?

stainless because you can throw it in the dishwasher. carbon steel is great but it's similar to cast iron in that it needs to be seasoned - thus exempting it from the dishwasher. Carbon steel lacks the heat retention of cast iron also due to the thinness, but benefits from the same thinness when it comes to heat-up time. But again, stainless - because it works well enough when properly greased and I'm lazy and don't like manually cleaning pans

Avoid plastic handles and make sure it fits in your oven. Being able to grab a saute pan and toss it in the oven to either keep it warm or finish it is a terrific convenience I've come to appreciate, so make sure it fits.

Also invest in towels for hot handles if you haven't already.

I'd get a stainless one because they're super easy to look after and the lack of nonstick coating is exactly what you want at times- build up that fond and make pan sauces etc. Carbon steel is too close in function to a cast iron for you to get that if all you have right now is a cast iron. They're great, don't get me wrong, just too close to what you already have right now.

As >>9079685 says, don't get anything you can't whack in the oven comfortably.

Yes. Part of my job as a Chef instructor is to do exactly that. I really don't enjoy using social media to stay in trend with younger people. Should have never accepted the job to teach at my alma mater.

BUT, one that's universal everywhere here is the campfire dog. Roast your hot dogs over an open fire, and then warm your buns (either over the fire to toast them, or wrapped in foil to keep them soft but warm), and then put a tiny bit of ketchup on the bun and a good squiggle of mustard over the hot dog once you add it to the bun. It's a classic, and indisputable.

Really this meal would fill me up, but if we're going for adding a bunch of stuff for the sake of it I say also give me four double cheese sliders from White Castle, a Cheesey Gordita Crunch from Taco Bell, and a McDonalds Happy Meal, girl toy, ask them to replace the burger with a McChicken extra mayo, small coke, no apples, and small fry instead of Happy Meal fry

I think fast food tastes good, and I am a very nostalgic person, fast food reminds me of my best childhood days

White Castle was always the food me and my friend got after seeing rock shows because it was open 24 7, Cheesey Gordita Crunch is my favorite Taco Bell item and Taco Bell in general reminds me of my old neighborhood friend, we would always get Taco Bell during sleepovers, and the Happy Meal is self explanatory
