A 300/250 is just safety insurance because you can't easily do dumb shit like break the wheel loose coming out of a corner, power wheelie, or accidentally go 40 over the speed limit if you sneeze. Hell, sometimes you have to really try to get up to an inappropriate speed for a corner. It tolerates mistakes so you can spend more time figuring out this "riding" thing than waiting for new parts and new paint after lowsides.

Go ahead and buy a GSXR600, buy a fatass VFR, buy a liter, who cares. Just know that you'll be gimping yourself with regards to independently learning serious gofast skills and will have to start doing track days to get good if you don't want to start risking it with a machine that commands more respect. For most street riders it doesn't matter. People spend their entire life slowing significantly for sharp turns and never leaning more than a quarter of the way over or using a body position other than upright.

A lot of old-ish (late 90s to mid 000s) sports bikes can be had for very cheap. Stick with something common and maintenance will be easy. Beware of the TL1000, it has a reputation as the widow maker due to it's shady suspension setup. The rear shock is not serviceable and it always stops working properly after not much time. If you do decide to get it, atleast make sure it has the steering damper.

Anyway VFR750 tend to be cheap, tho quite heavy, SRAD GSXRs, VTR1000 and RF900 can be had for dimes.

I've never ridden Sports though, thats why I am apprehensive.
I've always been up high on my KLR. My handle bars are high that most mirrors on cars.

The thing to understand about these Japanese sport bikes is they are literally race machines that are designed to be pinned at max RPMs at all times.

The reality is that most people don't use them in that capacity and the stresses they are subjected to on the street are well within the limits of the bike.

Are Triumphs reliable?

Rode my bike to work yesterday and it was pretty clear out besides some fog, but I definitely noticed my gloves are not up to snuff for riding in ~45F weather. Currently have a pair of Alpinestars SMX-1 summer gloves (all that mesh around the fingers doesn't help much this time of year)

Now I'm looking for some more season-appropriate gloves. I live in Washington so some sort of waterproofing is a must, and I ride to work at 4AM so wind protection at higher speeds seems to be important as well.
