Alternate dialers launch this stock dialer when it calls so I can't figure out how to use other keypads/dialers

Consider one of the Blackberry Androids (but not the Priv). 99% stock Android with monthly security updates every month. The Priv is still on marshmallow but it has the latest security updates so it's actually in a better position than all the phones that just got updated to 7.0 with the December 2016 security patch level. Most OEMs don't bother with monthly updates or if they do they push them out in lumps on a quarterly basis, leaving you exposed to security holes in the meantime. My Nexus 5 has seen better days, is battery life is barely useable now so I'm looking for a replacement.

My grandma just bought the LG G6. She is a prime example of old age preventing effective use of modern technology. Even I found the phone a hassle to use and she finds it troublesome to even find the apps she wants to open once I downloaded them for her and put them on the home screen. I needed to talk her through the fingerprint set up, as she was unable to follow the instructions which amounted to "lift your finger and put it back on the scanner". I suppose I have no specific reason to share this except my frustration of going through hours of setting up and explaining the use a phone to someone I know will never be capable of even beginning to make use of it's functions.
