First of all, the games have no respect for your time. They expect you to constantly run around gathering herbs and whatnot. Do people actually enjoy that part? It feels like I'm playing an MMO's worth of pointless grinding to get to the "fun" parts.
And that's assuming the monster fights are enjoyable, which I don't consider to be the case. This is the most perplexing thing for me since I have a long history with games like Dark Souls and PSO, which also have elements of slow, clunky gameplay with deliberate animation timings. Unfortunately for me, the MH combat just feels bad. Character movement is incredibly stiff since you completely lack the ability to move any direction other than forward, and turning is a slow and arduous affair. It feels like I'm driving a car rather than controlling a character. The very act of walking around makes me want to stop playing, which is doubly bad with the first point I mentioned as you spend most of your time walking around to uninteresting side content.
I don't think there's any other series that I've put more time or money into than MH that I simply can't force myself to enjoy. I've given it so many chances and not once enjoyed my time.

Once you get recipes and open farms and the like, that stuff is no longer a chore.
The real grind are the 5% monster drops like rubys and the likes.

The problem with videogames is the brainlet consumers who become obsessed with a single franchise and falsely think that if that specific franchise gets dumped down, that means the whole genre is dumbed down.
Even if King of Fighters gets more simple, there are a lot of other fighting games out there to play which are compled and rely on long combos. The thing about the modern videogame industry is that you have a lot of options. There are a lot of popular and active fighting games right now, and they're all different and have their own styles
