I don't get why he's so bent on it and the vast majority of them look ugly as sin, but until we get big news or 2.8 comes out and we can keep these things alive through normal discussion, a bump makes a difference. And it's not like he's hard to ignore, no one saves or reposts his pictures.

Not currently. The quest line was available last year and this year in JP (the game wasn't available last year elsewhere), so there's a good chance it'll be available again next year too, but you may be stuck waiting until then.
Unless maybe SENA decides to play off the Christmas angle and offers it sometime this month. I doubt they'll actually do that, but I can't write it off completely.

Grinded from Lv8 to 117 today, should I just follow the Story quests to keep unlocking stuff or are there good things in particular to focus on for progression?

If you can bear the grind, because you probably don't have very powerful medals yet, try to complete the Moana and Maui boards so you can guilt them once you unlock that ability. What story quest are you on? Also post best medals.

Kingdom Hearts is not a Disney game.
It's a game with Disney characters in it.
If it was just a Disney game, it would have already died, going by the example of actual "Disney games" which have all died miserable deaths.
It keeps going because it's a series of quality action RPGs, one of the very best in the genre.
It attracts people that like Disney and those who don't, because it stands perfectly well on its own. The Disney aspect of it is easily ignorable because all in all, it's just used to make the levels themselves and plays very little into the story beyond Mickey who barely does anything on-screen and your partners who become background noise even to us who like them.

I'm still not sure where are we going with the Proud+ quests. We need 24 Solar Gems to complete a single Proud Mode Keyblade, so going by this pace we'll be ending with a LV630 quest, maybe even LV870 if you can earn the Lunar Gems for the upcoming Proud Mode Keyblades after that.
Now things get interesting because if the quests go up to LV1000 we have 39 gems left (rainbow, beautiful, remembrance or all of them).
That's more then for one Keyblade, but is it enough for two?
If the number of Proud Mode Keyblades is 7, we get at least 750 quests, if it's 8 we get 850 quests in KHUX and if it's 9 we will get 1000 quests.
1000 quests would mean KHUX's story would end in 24 months, even though the remaining χ[chi] story and the three additional worlds are probably not enough to fill it.
Is this a realistic date for KH3 or is it too far-fetched?

KH wasn't made to cater to Disney fans.
It was made because Shinji Hashimoto and Takaguchi wanted to make a game with 3D movement in the vein of Mario 64.
Disney was an afterthought because they wanted characters as recognizable as Mario, and would not have happened if not for an encounter with a Disney exec in an elevator.
You're not biased because you appreciate the Disney aspect. You're biased because you think it's what the games are mostly or all about, and you keep implying that it's some sort of taboo to not be a Disney fan and like KH, as if people who dislike or don't care about Disney are not meant to play it.
As I said before, I've met people who love KH as much as I do but couldn't give a rat's ass about Disney. It's perfectly normal.

KH is a series of games about a white boy and his white friends saving pretty Disney princesses from the Darkness, where the main bad is colored. He also saves the arabs and asians along the way when they can barely help themselves, and saves his best friend from falling to the dark side.
You'd think that would raise some flags with those crazy people, though I can also see them being those people who claim to be fans without playing the games.

I think in some cases they love and hate the series at the same time.
Just look at the kh-info-block tumblr. It was a legitimate info source some years ago, where you could ask some of the more complicated lore question and get (mostly right) answers, because the whole mod team knew about all the games and read the interviews.
Now it has devolved into something different, only complains and outrage is answered by some by the left over mods that are all mentally ill according to their own faq.
But in defense of tumblr, the fastest and most reliable Unchained info can be acquired from there, this is especially useful for the JP version.

Hey, is it just me or are the raid boss levels spiking past numerical values? I was going to start maxing out Guard Armor to 99 starting from Level 1, and then the third fight with it it was level 12.
Anyone else getting this? This is no problem for me as now I can abuse this and just go backfight Trident Whales at 99 for lux (since over the past 2 days I managed to get that far).

Right now we don't know. Most new games either run the same or better right now with a few cases being slightly worse than the original (Which are in the process of receiving another patch to fix that) so who knows. Most of the Pro enhancements have been better looking graphics, v-sync, better AA, supersampling, and most important which is stable framerates (As seen in The Last Guardian just recently). I personally don't feel as if it's worth it for base users to upgrade right this minute, but who knows what will happen in the next year since we're already seeing Pro features being put as the priority, or at least the features making the overall experience better than a base user.
It's like if the N3DS actually garnered support for more than six games. For all we know it will be eventually essential to get the thing unlike the N3DS was, whereas the N3DS is better off if you're hacking the system since most of the gains for unhacked users are just load time drops for the UI, Smash, and Sun and Moon.

The Pro is essentially exactly what the N3DS should have been to begin with, a system where you have the base version of a game and then N3DS enhancements with the extra specs and buttons. Instead its power is locked outside of Pokemon, Smash, Hyrule Warriors Legends, The Binding of Isaac, and SNES VC unless you hack the thing, at which point games like Senran Kagura Burst and Code of Princess go from 20 FPS to something close to either 30 stable or 60 and Pokemon X, Y, and ORAS both stop lagging outside of triple battles. Streaming games but the framerate on your output video depends on how good your Internet connection is.
Emulators run much better and all of them are developed with the N3DS as the given device, O3DS emulators are really slim pickings at this point or, not at the forefront of optimization at least.
NTR will run during games that require the extra RAM on the O3DS (So Smash, S&M, Monhun, and I think Hyrule Warriors but I'm not sure) which means you can take screenshots and run patches and stream on them as well instead of needing to boot up Miiverse every time you want to take a screenshot.
Obviously there's the ability to remove underclocking (Where the N3DS drops itself to 3DS specs when it doesn't detect the game having an N3DS mode, PS4 Pro does the same thing) but it's somewhat buggy, some games crash with it while others run it fine, and there's different settings you can run if they do crash.
I think there's one more thing I'm forgetting that's different from the O3DS but those are the main features I can recall off the top of my head.

Quest 630 starts at +22 HP. 30 attack counter. Challenge to beat in two turns/no continue. Grants the "Heartless" banner.
New Heartless: Ding Dong Bell at Quest 625.
It starts with defense buffs and casts defense down
New Heartless: Pierce Knight at 628. Casts debuffs, but only during its attack. Looks like a Lance Soldier subspecies.
