I think they're supposed to represent trade routes and a way for you to walk through the Sahara. They have like 1k supply limit so you'll take assloads of attrition but it's possible.
Also while I haven't played in North Africa / Malizone yet so I can't be sure, there's a bunch of provinces that give special bonuses just for holding them (if you hold the Bosphous on both ends you get insane amounts of trade power and trade efficiency)so I'm guessing for example that those areas might give a modifier like 'monopolizes Saharan salt trade' and give a boost to trade income.

You can't go far as Persia but it's absolutely the most underrated nation when it comes to learning how to guide your industry. Even if your industrial score can't break into the top 5, you can get the top 2 spots on a shitload of goods simultaneously since all industrially important RGOs you don't have in your territory are easily acquired in Sudan and China. You can westernize pretty early too, before 1860 if you got gud.

Well there are few strategies. I hadn't played as Georgia but I did build empires in Caucasus as both Trebizond and Zoroastrian custom OPM for the achievement (you can be western for free in there) so here is what I did:
First get Religious CB its glorious. Then see how much land you can grab before Qara vassals you, it doesnt need to be a lot, just as much as you can. When Qara does inevitably vassal you, get into bet with Turks or Mamluks and try to get them to support independence. In the independence war take as much territory as you can from Qara, Trade centers being key. Get chummy with moskovites and expand into where ever you can expand. Use defensive terrain as much as possible.
