Long answer, but regardless of who you use:

Remember that sim will try to drill to extent his pressure. Try to space yourself far enough that your normal can contest the situation. Neutral jumps are not an answer for this situation since Sim's jab will put you back in a bad position.

If you see sim timing one normal after the other, you can contest this timing once blocked. In Vega's case, he can sweep Sim's mk after blocking the a first mk. Vega can also cr.hp Sim's mp (or hk) after blocking a mk. Test this out with your character, but remember that each player has his own timing and ways of adapting.

Watch out for slides once Sim has his V-trigger as he will start using it from max range. He will try to make it whiff, and on contact it will activate, placing you in a bad situation. Vega can deal with this but using mk, but at the expense of positioning himself in a more offensive place.

That's a few of the things i do, and could potentially write more, but i don't think that giving too much info would be of use, and honestly it is not as important as you being patient, walking forward, and learning your opponents tendencies/timing.

Reminder: Dantarion (a skilled hacker/modder) had to find an exploit to unlock all colors and costumes and avoid tedious survival mode for PS4 SFV so the game could look good on ESPN/Evo/Worldwide. Capcom couldn't provide this for their OWN DAMN GAME!

Look at a post on r/Kappa. It should allow you to get all the survivals and color unlocks in like 10 minutes. There's also a way to use it to trick the shop into setting the premium costumes equal to 0 fight money to allow you to get them for free. It's brain-dead easy, just follow the instructions

If you don't have programmers that are experienced in a certain field it doesn't matter how much money you throw at them - they are not going to make something that works properly in a short period of time.

Japanese game developers often have this issue - they are good at programming stuff that is directly related to gameplay, but when it comes to anything like the cash shop or advanced online features they are incompetent ( especially Capcom it seems )

There's a guy I was playing earlier today, he worries me, talked about actually wanting to kill himself after he lost a couple of matches and felt like he couldve won. When we played today he would keep quitting to the lobby after I won the game, and eventually it started getting to the point where he quit to the lobby if I landed a hit that led to a combo that would kill on him, from there it went to where he would quit back to the lobby even if I couldn't kill him but he fucked up. At that point I stopped (we were supposed to stop half an hour earlier, but the dude kept going, and I was fine with it) I said we had to stop, and he BEGGED me to keep going, eventually he forced himself to stop.
I have never seen someone so passionate, so angry, so dedicated, and so serious that he said he almost wanted to kill himself.
Also he maxed out his credit cards to go to evo.
