Durotar is a desert. The Barrens are fuckin barren. But Azshara is old NE holy ground and Ashenvale is the first step on the approach to Darkshore, Hyjal, and Darnassus. Everything the NEs care about is in or on the other side of Ashenvale, so Orcs expanding into it and cutting it down and spreading the Barrens northward is a threat to them.

Humans have their own lands to grow food on and cut lumber from, and hate the Orcs, so NEs teamed up with them.
