The resolution to the gender bender arc was done quite well imo, i mean, Gintoki even says that the social values others made up shouldn't be the only things everyone should strive for. I don't think what it's trying to do should be hard to understand, but you're probably looking at it from the wrong perspective. The concept isn't that she's a lesbian, but that she has the mindset of a pervy male virgin, so she's easy to get along with as her interests match the guy's. Another character is a woman who is a huge fan of adult videos.

An easier example to understand is Kirino in OreImo: her being an otaku with a fetish for siscon stuff was a fantasy aimed at otaku who are into siscon stuff.

Gamma's writer was a dude, I really liked his stuff, his love for superheroes/sentai and yuri shone through in that work in equal measure.

Eh, I don't think it's reasonable to call the eroticism in Virgins' Empire fanservice. That implies something extraneous, when here being sexy is the whole point of the manga. Besides, female mangaka don't avoid lewdness in their yuri, Amano Shuninta's Ayame 14 being a prime example.

As for other male yuri mangaka, I don't really like his other work, but Takahashi Mako's Tiger Lily is one of my favorite one-shots ever.

You could say that a character explicitly defined as a lesbian plays to the insecurity of yuri fans/LGBT crowd in the same way that defining a character as bi plays to the insecurities of straights. I don't have anything against bisexual characters but I dislike how bisexual females are mostly presented in fiction, in most cases they are cheaters, nymphomaniacs, looking for sex everywhere, first doing it with girls then with guys cause they are bisexual(which is one of most idiotic reasons used in fiction), and in the end treating their female partners as a phase and guys being their real choices cause them can get them pregnant and have normal heteronormative relationship as a result.
