In terms of changes to the actual *content*, I think it's problematic at least to talk about changes to make, given how the books haven't given an indication how a lot of the plots D&D have "made their own" will finish.

Other than having literal engines of stupidity behind the show, the biggest mistakes that aren't something they got to do just because there's no smarter people left vetoing them have to do with "condensing" plotlines and leaving out smaller characters. Even when the characters aren't required for front-and-centre plotlines, like Stannis, or more modestly, Jeyne Poole, it weakens the "crunchiness" of the setting, and ends up reducing it to the anime-tier everyone-knows-everyone, "Cersei will be back next episode" shitshow.

In the books I do remember there being mention about how he got beaten by Cersei *because* of how honour-bound and legalistically-minded he was, but it would have been back when he was more relevant to the plot. The TV show is probably just mentioning him to remind normie plebs who the fuck Arya and Salsa are, and to stir nostalgic memories of good writing and Sean Bean in long-suffering fans.

However, one interesting thing I've heard about the books is that a trend in the post Red-Wedding books wasn't for just more "mean grrrls" edgelord will-to-power nihilism like D&D are doing with every female character, but for showing more of a "slow and steady wins the race", by showing how Cersei is getting seriously BTFO by the faith and (much harder than in the TV show, where none of this happens), rejected and scorned by the secular power in the Tommen realm - Lannisters, Tyrells, and (key plot point) the Iron Bank all oppose her.
Meanwhile, in the north and riverlands, the Freys are getting rapidly culled by the Brotherhood without Banners, Lady Stoneheart, and pro-Stark-Tully resistance, while the Boltons are in a very shaky position because Stannis' honour & track record for honesty/bluntness/thoroughness have won over for him the Wildlings, a good chunk of the Northern houses, & the Iron Bank, while the Boltons are, per the most prevalent fan theory - & as rumour has it, per the plot D&D would have followed had they not fucked up the filming of BoB - looking set to be backstabbed by the northern houses that haven't yet declared for Stannis & Rickon Stark.
And as further example of this alleged tendency towards GRRM showing realistic consequences of what happens when rulers turn into fantasy trope politicians, the idealistic Jon Snow & Daenerys are more or less at a low point after being screwed over as a result of their "maverick" policies.

But who cares because we got that great scene where Littlefinger cries like a bitch while Salsa and Arya mug at him.

Well, the Seven Kingdoms were only held together through dragons. Once those died, it was civil war after civil war. At the end of it, something like the Seven Kingdoms cannot realistically and feasibly survive as a singular entity. It's just too big.

MAYBE you can keep all the Southern kingdoms united and centralize them with a singular government and power structure. Like the Stormlands, Westerlands, Reach, Dorne, Vale and Riverlands. Though even in that case you should ditch one or two of those for better centralization. This united kingdom of 2-3 southern kingdoms would dominate Westeros alongside an independent North anyway, and it wouldn't face constant internal instability.
