This is what happened:

Men arrive and start cutting down trees. War starts between men and children. After war, men and children forge pact. After a thousand years of peace, zombies attack. Men and children allies against zombies and children create the wall to keep zombies out and men create the night watch to man the wall.

Men and children did not have a war when the zombies appeared. Nowhere in the novels or in the tv show is it mentioned that children and men had a second war after a thousand years of peace.

The reason why they don't mention it in the books is because people don't fucking know about it. The books are all about unreliable narrators, with history having been turned into fables over time. People don't even believe the Children still exist for fuck's sake. Sam did find records at Castle Black about the Children paying tribute to the Watch with a certain amount of obsidian each year, exactly the kind of tribute you'd ask of an enemy who lost.

If you honestly believe that the next book won't have Bran either being told or seeing how the Children created the Others to fight Man then you're a fool. D&D are fucking up a lot but this isn't one of the things. What they are fucking up is the fact that they've made the Others and Wights the same thing, both vulnerable to dragonglass, and thus fuck up their own story.

The First Men arrive and skirmish/war with the Children over territory, but eventually achieve a peaceful coexistence for centuries/millennia. It's during this time that the Children use powerful magic to smash the Arm of Dorn that used to connect Essos and Westeros.

Much later, the Andals come, bringing with them the faith of the Seven and start wholesale slaughtering the Children and cutting down the weirwood groves. A second war ensues, one where the First Men and the Children, both pushed north by the advancing Andals, employ the Children's magic again, creating the Neck, the swampy isthmus that separates the North from the other six kingdoms. As this was only a partial success, the Children use their magic once again, creating the White Walkers and their subordinate Wights who prove treacherous, and thus begins the Long Night, where the remaining First Men and Andals("men") and the Children put aside their differences to stop the Night's King. It is during this time that the semi-legendary Bran the Builder erects the Wall, Winterfell, and is credited with aiding in the construction of many of Westeros's other notable structures, among them Storm's End.
