so when you're downshifting, the exact timing is a bit blurred and overlaps but what do you follow?
Clutch in -> throttle up -> gear down -> clutch out

or

Clutch in -> gear down -> throttle up -> clutch out

I've been doing it the second way, I press the gear down at about the same time I clutch in and it feels normal to me it's how I've done it forever but I was talking to someone and they say you should gear down AFTER or simultaneous to blipping the throttle and now I'm feeling confused.

That depends how far apart your gears are.

On my Jeep with huge-long spacing on the gear ratios the speed difference is to great and you NEED to blip the throttle or you'll at best chirp the tires and worst detonate a spinny bit.

In my Mazda with much tighter gearing, not really needed I just do it out of habit.

On the bike, it feels very jerky if I don't rev-match down shift.

I know it has constant velocity carbs but I'm pretty sure they have slides too. I am lolshit with carbs. Sometimes it runs better with the choke on, less or no sputtering. It ALWAYS runs phenomenally better in cooler air like the 60's (lolFahrenheit) and the sputtering usually always happens on the highway at least a little bit. I haven't the slightest but I've been all up down the electrical and ignition systems of this bike but haven't messed with the fuel delivery much.
