Because Gundam is one of the biggest, longest running (with regular new content), popular, well known, and most sucessful IPs to ever come out of Japan. Its like batman at this point. Every studio wants there own massive IP like gundam, so they ape its main points.

Plus a lot of the people making these series grew up on gundam.

What made Gundam unusually successful is not the quality of the shows, it's the toys business. It's made clear when you look at the western fandom, nobody here cares about Gundam because Gunpla and merchandise are not popular at all. People actually know more about Code Geass than Gundam.
