If you haven't already, watch Shin Godzilla, which is a legitimately good movie.

I agree that vs Destroyah isn't as good as most people say. I think a lot of people are attached to it solely because of the ending. Return of Godzilla, vs Biollante, and vs King Ghidorah are all from the same period and I'd say all of them are much better.

You could also maybe check out the some of the millennium series movies like GMK, Against Godzilla/Tokyo SOS, and Final Wars if you're specifically looking to monster fights with a lot more spectacle.

I actually have been itching to watch it again pretty bad, just haven't had the time.

I haven't seen it since before the election and getting full redpilled, so I'll probably end up hating it now because of all the muh diversity shit in it.

Also to contribute, I'd say Interstellar belongs there. And while not a movie, Breaking Bad. I hear nothing about that show anymore and everyone was jizzing their pants over it
