I've looked at building a new PC myself, and would be prepared to spend about £650 or $900 on putting a whole new rig together, so I get more than a couple years use out of it. But I wonder if its possible to upgrade this one to a similar standard. Seems a lot easier and cost-effective if I can reach a similar spec without having to buy a new case, PSU, hard drive etc.
Also is there any real point in going for a CPU with more than 4 cores? All the games that I play don't even use more than 1 at full capacity it seems.

I would get an 8350 CPU if I were you (that's what I have now and I love it that's why I'm suggesting it). Not sure how it compares to your 4350 though.
Add a new video card. I am currently thinking about adding or upgrading to a 1050 or 1060. I have a 650 Ti and though it works for the old games I want perfectly fine I haven't upgraded for a couple years so might be in the same boat as you.
If you don't have an SSD then add a 120 r 256 GB SSD in there and you should see noticeable improvement. Those should cost like $300 or less.
8 GB of ram you have now is fine.

Go Ryzen 5 1500, grab a B350 board preferably ASRock or gigabyte. Some really fast RAM shoot for 16gb and you're good. If you have a case and all that

Having a look at that now and it doesn't seem to be that much better than my 4350 as far as I can tell (which is not very far).

R5 1500 Is 80% faster than your 4350. Don't get an FX CPU they're house fire bottlenecks.
You definitely need a new GPU, Miners have shot up the price for them, youre better off not getting one right now and using your current GPU. And get one in a few months.

The best thing you can upgrade your cpu too is an FX8350 without getting a new mobo, I dunno if i would recommend doing that. You should ask in the pc building general.
As for a video card. i wouldnt get something more powerful than a 1060 for your current setup as your cpu will bottleneck most more powerful GPUs
